what are the advantages/disadvantages of mismatching stages

Stages are different, as far as I can tell, from manufacturer to manufacturer.
But in your typical single plate clutch system you have 3 components pressure plate clutch disk, and flywheel. To get more holding power you can either increase your clamping force by upgrading your presure plate, or increase the friction of your clutch disk.
Stage 4 pressure plate sounds like real mean son of a bitch. It might hold like hell, but it might make for a very stiff pedal. I like a stiff pedal myself, but my girlfriend hated to drive my car.
It sounds to me like bully wansn't lying however. That setup seems like it would work.
For the longest time I was using an Exedy 3 puck, I'm pretty sure copper ceramic, with a stock STi pressure plate. Then I moved up to a Exedy pressure plate as well. ( as a interesting note, Exedy makes the STi clutch system)
This has turned into a ramble, but to answer your question, mixing stages is really common, and it lets you fine tune the clamp, longjevity, feel, inertia, and color of you clutch package.
